At the very pinnacle of Châteauneuf-du-Pape sits La Crau, where the old Brunier family tends to a vineyard on a barren, rocky hilltop near a ruined semaphore tower. Perfect for a generous meal (think Christmas or New Years), this wine has notes of cherry, plum, cooked apple, leather and black truffle. Keep a bottle or two in your cellar for a year and watch the cherry and plum recede while the leather and truffle strengthen.
