With one of the widest thermal amplitudes in California, Happy Canyon gives its grapes a nice cold shock each night. Perfect for the cab sauv and malbec in this bottle. The grapes were then cold soaked for three days before a whole berry (not crushed) fermentation. Inky dark yet it springs on the palate. A big wine, true, but one so balanced even the salad eaters in your household will enjoy it.
