Raúl Dávalos' father once said he'd shoot him if he ever aged a Tacuil wine in oak. It is not the traditional Calchaquí Valley way. This malbec is about as full on as they come, layers upon layers that just keep on giving. Fine, ripe tannins, subtle notes of liquorice and black olive on the finish. We recommend decanting for several hours.

From Argentina's oldest vineyard (more than 200 years), this pre- phylloxera malbec has spent centuries learning to survive in the Calchaquí Valley's extreme environment. At more than 8,500 feet, this vineyard is subjected to intense UV radiation and wide temperature swings. Stony, sandy, quick-draining soil, fed with Andean meltwater.

Deep in Argentina’s desert Calchaquí Valleys, winemaker Raúl Dávalos continues a 200-year-old family tradition, producing handmade, critically acclaimed wines. Bodega Tacuil says that their wines should "demonstrate the originality of the grapes in their purest state, without the classical influence of wood." (Raúl’s father once said he'd shoot him if he ever aged a Tacuil wine in oak. It is not the traditional Calchaquí Valley way.) Full body, with hints of plum and cherry.

These grapes are grown at more than 8,000 feet above sea level. Vineyards here are subject to intense UV light, hot days with freezing nights, and very little rain. Farming is organic less by philosophy than by the fact that the area is too remote and the environment too harsh for pests to be a serious problem.

Under the ownership and vision of Patricia Ortiz, Bodega Tapiz is a pioneer in Mendoza's Uco Valley. The state-of- the art winery is located in the foothills of the Andes Mountains. The highly rated wines of Tapiz are made by the celebrated winemaking team of Fabian Valenzuela and famed Bordeaux winemaker Jean Claude Berrouet (winemaker of world-famous Petrus for 44 vintages). Their wines are a beautiful tapiz (tapestry) of terroir and innovation. This sparkling torrontés is made in the traditional Champagne method.

El Jarillal Estate, Alto Agrelo, Luján de Cuyo, Mendoza, sits at about 3,444 feet above sea level. This is a very steep area with fresh air at night and very good sunshine. This gives grapes aromatic intensity and the desert keeps them in very good health, free of molds and mildews.
