It grows above 6,000 feet, where the nights turn cold.

Gualfín is high desert in Argentina’s Calchaquí Valley. The sun is strong all day and the temperature drops hard after dark. That swing lets the grapes ripen and still keep their acid, which is what makes a white taste fresh.

For years, every grape went to someone else.

The Bonner family took over a forgotten vineyard fifteen years ago and sold the fruit to a respected regional winery, under a confidentiality agreement. Then they held back ten tons and made their own white. This is it.

This one isn't. It is fully dry, with no sweetness. The flowers you smell come from the grape, not from sugar.

For fifteen years we sold every grape from this vineyard to somebody else. It was good fruit, and we were proud of where it went. Then we finally kept some back for ourselves, and the first thing we made was this white.

It surprises people who think Argentina is only Malbec. Pour it cold, leave it on the table, and taste it again in twenty minutes. That is the whole argument.
