A holiday about work, spent not working

Labor Day is the only American holiday that honours the people who do the actual work, and the way the country celebrates it is by lighting a fire and standing around it. I have never found that contradiction funny. I have found it useful.

In Argentina, the fire is not a Monday in September. It is most Sundays. An asado is not a barbecue — nobody is racing, nothing is glazed, and the meat sits over coals for hours while everyone else does very little. The wines that go with it are not big trophy bottles. They are honest, unfussy reds with enough acid to cut fat and enough grip to survive smoke. That is the first collection, and it is six of them.

The second is here for the other half of the holiday — the part about labour. Pre-phylloxera vines in Toro that somebody has hand-tended for over a century. Cabernet Franc off eighty-year-old Chinon vines. A Santa Barbara GSM that is still foot-stomped because the man who makes it has not found a better way. These are wines you can taste the work in.

The third is three bottles, not six, and it is for the person who had the year. It is capped at 100 sets because one of the three is capped at 100 bottles.
